Instructions

  1. First bake the bacon cubes in a small baking dish at 200 - 220 ° C for about 15 minutes in the oven until crispy. The bacon can also be left out.
  2. For me personally, the dish tastes better without bacon, which is why I don`t fry the bacon directly in the pan with the potato noodles, but bake it separately in the oven.
  3. Melt the butter in a non-stick pan. Add the noodles and fry for about 10 minutes over a medium heat, turning them occasionally, until golden brown.
  4. During this time, cut the jalapenos into thin rings, removing the stones with the knife. Peel the onion, cut in half lengthways and cut into thin wedges.
  5. Put both in the pan and use the wooden spoon to distribute them evenly in the pan. Fry for about 2 minutes over medium heat. Add any other vegetables, e.g., drained corn from the can, some pre-cooked broccoli and a red or yellow pepper cut into strips.
  6. Peel the clove of garlic, mash it with a garlic press and add to the pan. At the end, pour mozzarella and cheddar cheese over it, then close the pan with a lid and let the cheese melt briefly. Serve immediately. If you want, you can add bacon cubes to your portion.
