Instructions

  1. Heat the olive oil in a larger saucepan, add the pieces of beef and fry briefly.
  2. In the meantime, peel the onions, cut in half and cut into thin slices. Clean the spring onions and cut into rings, adding the green part. Both are also ready-to-weigh to be weighed.
  3. The garlic, peel and finely dice. Then add the onions to the meat and cook until translucent. Then add the spring onions, garlic and tomato paste, sauté briefly while stirring and deglaze with the can of tomatoes. Top up with the meat stock, add the chopped peppers and beans. Add the chilli powder, cocoa, caraway seeds, oregano, bay leaves, and add a little salt and pepper. Bring this to the boil, stirring occasionally. Turn the temperature down and let the lid simmer gently for about 2.5 hours. Or just until the beans are soft.
  4. During the cooking time, stir every now and then. Season the chili con carne with salt and pepper, arrange on plates, sprinkle with a little cheese and serve.
  5. A fresh baguette goes very well with it. You can of course also take a can of kidney beans and prepare the chilli exactly as indicated. Only add the beans that have been poured off and rinsed in a sieve after about 2.5 hours of cooking. About 5 minutes in advance that they are just getting hot.
  6. With the chilli powder you should also proceed according to your own taste. It is better to take a little less first, you can always give more. If we like the chilli particularly hot, I even use 1 tablespoon chilli powder.
