Chop the garlic and chiles and chop. (Attention: Thai lilies are very hot! If you don`t want it too hot, either use less chiles or remove the seeds).
Put the fish sauce, garlic and chiles in a bowl. If you have time, let the whole thing go through for 1 - 2 hours. This makes the chilli heat and garlic stand out better. Chop a handful of coriander or, depending on your taste, parsley. Mix in the tomato paste, honey and coriander. Season with pepper and - if too little salty - with fish sauce. It is best to let it steep overnight.
