Mix the cream with the sugar until frothy and wait until the sugar has dissolved. Only then stir in the vinegar and lemon juice, as this will make the sauce thick and stick to the salad.
Wash the Chinese cabbage, remove the stalk and cut into fine strips. Wash and chop the apple, drain the tangerines. Fold the salad ingredients into the cream sauce and serve immediately.
The cream sauce also goes well with fresh lettuce.
