Instructions

  1. Roughly chop the chocolate and melt it together with the butter in a double boiler.
  2. Beat the egg yolks, sugar and rum until frothy. Pour in the melted chocolate butter while continuing to beat.
  3. Mix the nuts, flour and baking powder together and mix in with the grated carrots and apples.
  4. Beat the egg white until stiff and then carefully fold in.
  5. Pour the batter into a greased bundt cake pan.
  6. Bake in the preheated oven at 180 degrees for about 50 minutes.
  7. When cooled, dust with powdered sugar or cover with chocolate glaze.
