- Roughly chop the chocolate and melt it together with the butter in a double boiler.
- Beat the egg yolks, sugar and rum until frothy. Pour in the melted chocolate butter while continuing to beat.
- Mix the nuts, flour and baking powder together and mix in with the grated carrots and apples.
- Beat the egg white until stiff and then carefully fold in.
- Pour the batter into a greased bundt cake pan.
- Bake in the preheated oven at 180 degrees for about 50 minutes.
- When cooled, dust with powdered sugar or cover with chocolate glaze.
