- 1. Whip the cream until stiff and let the packet of cream stabilizer trickle into it.
- 2. Fold the mascarpone into the cream. Stir in lemon zest and maple syrup.
- 3. Cut a banana in half. Cut one half into small pieces and fold into the cream and mascarpone mixture. Halve the other piece lengthways.
- 4. Grate the chocolate or chop it finely with a knife.
- 5. Divide the cream between two glasses. Decorate each with a piece of banana, a pause cracker and the chocolate.
