Instructions

  1. For the dough, mix the flour with the starch. Cut the softened butter into handy, small pieces. Add the remaining dough ingredients and knead into a dough with the dough hook. It is important to ensure that the butter is really soft, but not runny.
  2. Roll out the dough on a floured work surface approx. 5 mm thick and cut out approx. 3 - 5 cm circles. Place the cookies on a baking sheet lined with baking paper and bake for 10 minutes at 200 degrees top / bottom heat. Attention: The cookies should be observed from the 9th minute, as they quickly become dark. Take the cookies out of the oven and let them cool down.
  3. For the filling, melt the couverture according to the manufacturer`s instructions. Grate the marzipan in a bowl / mixing bowl. Add the softened butter and the melted couverture to the bowl / mixing bowl with the marzipan and stir the ingredients until creamy.
  4. Put about a teaspoon of the filling on a cookie and press the filling flat with a second cookie. I can see about 1 - 2 mm of filling. The amount of filling can be adjusted according to taste
  5. To decorate, melt the whole milk couverture according to the manufacturer`s instructions and then dip one side of the cookies into the mixture.
  6. Note: The couverture can be chosen as you like. My family likes this combination best.
