Instructions

  1. Separate the eggs. Beat the egg whites with a pinch of salt until very stiff. Whip the cream very stiff. Mix the egg yolks with the vanilla sugar until frothy. Stir in the orange zest and orange liqueur.
  2. Melt the chocolate in a water bath and add to the egg mixture while stirring. Carefully stir in the very stiff egg whites, then the very stiff whipped cream. Leave to set in the refrigerator overnight.
  3. To serve, cut off the dumplings and garnish with mint leaves.
