Instructions

  1. Separate eggs. Beat the egg whites until stiff.
  2. Mix butter and sugar in a separate bowl until very frothy. Gradually add the egg yolks and stir everything well. Add the vanilla sugar and lemon zest. Mix the flour and baking powder and sift over the egg mixture. Gradually add the milk (the dough should fall viscous from the spoon, not become too mushy). Add the chocolate chips (or chopped chocolate) to the batter and then carefully fold in the egg whites.
  3. Place paper liners in the hollows of a muffin tin. Then pour in the dough (if the dough is very tough and sticks to the spoon, rinse it off with cold water in between).
  4. Bake the muffins in the preheated oven at 200 ° C for about 10 minutes. Then turn the temperature down to 180 ° C and continue baking until the muffins are golden brown.
  5. Note: The recipe was originally designed for 12 muffins, but I always get at least 20 of them.
