Instructions

  1. Line a springform pan with baking paper (clamp the paper in the base) and grease the edge with butter.
  2. Clean and stone 1 kg of fruit and cut into small pieces if necessary. There should then be 600 g net left.
  3. Fruits with firm flesh, such as cherries (sweet or sour), peaches or apricots are particularly suitable. Whether fresh, frozen or canned. With the latter, drain very well, preferably for a few hours.
  4. Whip the cream until stiff and place in the refrigerator.
  5. For the light curd mass:
  6. Beat 2 eggs with 100 g sugar, 2 packets of vanilla sugar and a pinch of salt until frothy and creamy. Add 500 g low-fat quark and 1 packet of vanilla pudding powder and stir to a smooth cream. Carefully fold in half of the whipped cream.
  7. For the dark curd mass:
  8. Beat 2 eggs with 100 g sugar, 2 tablespoons cinnamon sugar, 2 tablespoons Nutella and a pinch of salt until frothy and creamy. Add 500 g low-fat quark and 1 packet of chocolate pudding powder and stir to a smooth cream. Carefully fold in the other half of the whipped cream.
  9. Preheat the oven to 200 degrees top / bottom heat.
  10. First put the light quark mixture in the springform pan and smooth it out. Cover tightly with fruit. Then pour the dark quark mixture over it and smooth it out. Top with fruit.
  11. Bake in the oven for 30 minutes at 200 degrees and then for about 30 to 45 minutes at 180 degrees (chopsticks test). Let stand for 10 minutes with the oven door open, let cool in the tin overnight.

  13. Since my springform pan is not airtight, I put a baking sheet with parchment paper one step below the cake in the oven.
  14. Variants:
  15. - Pour in the light and dark curd mixture spoon by spoon, as with the zebra cake (then without fruit)
  16. - swirl like marble cake with a fork, (then half the amount of fruit on top)
  17. - or with soil.
