Beat the egg white with a pinch of salt to make the egg whites. In another bowl, beat the margarine and sugar until frothy. Stir in the egg yolks. Mix the flour, baking powder, cocoa and cornstarch and stir in alternately with the milk. Finally, carefully fold in the egg whites.
Bake the batter in the clover leaf waffle iron and let the waffles cool down a little.
Mix the cream cheese with the cream and powdered sugar to create a creamy mixture. Spread on the waffles with a spoon so that it looks like the white of the fried egg. Place the apricots in the middle as egg yolks. Serve immediately.
