Remove the outer leaves from the chicory, wash and cut the stalk out a little in the middle, cut into strips. Halve or quarter the mushrooms depending on the size. Dice the onion, clove of garlic and bacon.
Heat some butter and fry the onion, garlic and bacon one after the other. Add the minced meat and fry well. Then add the mushrooms as well, add a little salt and pepper and finally add the chicory, season with a little thyme. Let simmer gently in a closed pot or pan for about 5 minutes. Finally add the sour cream or crème fraiîche and bring to the boil.
