Instructions

  1. Rub the chops with a little salt and turn them in flour. Heat 1 tablespoon of butter and 2 tablespoons of oil or clarified butter in a pan. Fry the chops on each side for about 3 minutes until golden brown. Remove the chops and keep them warm in the oven.
  2. Cut the onions into fine strips and roast them in the hot fat. Take the pan off the heat and sprinkle with 2 teaspoons of paprika powder. Stir in 2 tablespoons of tomato paste, add 200g of creme fraiche.
  3. Bring the sauce to the boil briefly. Add the chops and let stand for about 2 minutes.
  4. Mashed potatoes with beans or just a little crispy baguette tastes very good with it.
