Peel and core the apples and pears and cut into small pieces. Immediately drizzle with lemon juice and mix with the other ingredients for the filling.
Divide the dough into 2 portions. Knead carefully and quickly with a little flour. Roll out between two layers of baking foil or cling film, round and slightly larger than the springform pan. Line the bottom of the pan with parchment paper and line with a piece of dough. To do this, remove the top film from the dough (be careful, it sticks a little !! Work slowly!) And place the dough in the middle of the springform pan. Let something stand up on the edge and press down lightly.
Now pour in the filling and then cover with the second layer of dough. Brush the surface with 1-2 tablespoons of milk (not calculated !!!) and prick several times with a fork.
Bake in the oven at 175 ° C top and bottom heat for about 40 minutes.
