Instructions

  1. Remove 6 tablespoon of the banana juice, dissolve the gelatin in it and set aside to swell.
  2. In a small saucepan, heat the rest of the banana juice slightly, but do not let it boil! Separate the eggs. Beat the egg yolks with the warm banana juice using a hand mixer or a food processor until the mixture has turned whitish.
  3. Peel the bananas, puree with lemon juice and beat into the foam with maple syrup. Quickly stir the dissolved gelatine into the mixture with a whisk. Then place the bowl in the refrigerator until the cream begins to gel slightly.
  4. In the meantime, beat the egg whites, salt and powdered sugar in a separate container until very stiff. Take the banana mixture out of the refrigerator and carefully mix in the egg whites.
  5. Fill portion by portion into dessert bowls and lightly press a mini chocolate kiss into the center of the banana foam. Chill for at least 2-3 hours.
  6. The foam kisses get a bit sticky when you press them right in. If you don`t like that, you should put them on the foam just before serving. If you leave them out, a serving has 2.5 points. Instead, you could use shredded chocolate to decorate.
