Instructions

  1. Wash the beans the night before and soak them in a large bowl covered with cold water.
  2. The next day, clean the leeks and carrots. Halve the leek and cut into fine half rings, cut the carrots into fine cubes. Peel the potatoes and also cut them into cubes.
  3. Fill the beans with the soaking water in a high pressure cooker (also works in a normal, large saucepan with a lid, then the cooking time is increased by about twice as much!). Gradually layer the cut vegetables and the potato cubes. Sprinkle with the vegetable stock powder and the thyme and stir in a little. Finally, place the whole piece of the Kasseler roll roast on top.
  4. Close the lid and let the pressure cooker develop steam at the highest temperature. I like to cook stews on level 1, the meat is also so tender. When level 1 is reached, turn the temperature down to 4-5 (electric stove) and let the stew boil for 20-25 minutes. In a normal saucepan, the stew with the lid should cook over medium heat for 40-45 minutes.
  5. At the end of the cooking time, allow the pot to evaporate (of course, this is not necessary if you are using a normal pot). Remove the meat, let it cool down a little, cut into small pieces and add to the vegetables again.
  6. In the meantime, peel the onion, cut in half, cut into fine half rings and fry in a pan with the tablespoon of oil. Add to the bean stew together with the grated lemon zest and the washed and finely chopped parsley. Stir in and serve the stew hot - with a little vinegar to taste.
  7. A total of 43 points / with 6 servings, 1 serving has 7 points (when using the satiety maker = 3 points per person for the beans!)
  8. The dish can be frozen super in portions. But omit the parsley and only sprinkle over it when serving.
