Crumble gingerbread and soak in Grand Marnier and cherry juice. Mix the quark with the sugar and cinnamon, whip the cream with the whipped cream and fold into the quark. Always layer 1 layer of quark, 1 layer of gingerbread and a few sour cherries on top of each other in dessert glasses, the last layer should be quark, sprinkle with grated chocolate and serve.
