Drain the cherries and collect the juice. Measure 1/4 liter of the juice. This is the cherry juice needed for the recipe. The rest is not needed.
Heat the cherries, juice, wine and cinnamon stick in a saucepan, but do not boil. Put in the mulled wine spice bag and let it steep for 15 minutes. Remove the cinnamon stick and mulled wine spice again.
Add the amaretto and puree the mixture. Add the preserving sugar, bring to the boil and simmer according to the instructions on the packet. (Caution: danger of splashing! Use a large saucepan.) Make a gelling test and immediately pour into jars that have been rinsed with hot water and close tightly. Turn glasses upside down to cool.
