Meanwhile wash the sweet potatoes. However, they do not have to be peeled. Then cut into the potatoes so that fine strips are created and they are still connected at the bottom. Leave approx. 1 cm space to the floor (see picture). Brush the sweet potatoes with olive oil and season with salt. Then bake for 30 - 40 minutes.
For the sauce, melt the butter and mix it with the honey, the vanilla extract, the cinnamon and possibly a little maple syrup for the taste. Chop the nuts and mix them into the butter and honey mixture.
The type and size of the nuts can be changed as desired. I like to make the potatoes with cashews, almonds, macadamias and pecans. Then add two pinches of salt to the butter and nut mixture.
After the baking time, pour the mixture over the sweet potatoes and bake again at the same temperature for 8-10 minutes.
When the potatoes are done, serve.
Tip: The sweet potatoes go well with saddle of venison.
