Rub the turkey with the first 5 ingredients, marinate in the refrigerator overnight. Mix the melted butter with the curry and use to brush the bird.
Fry the bacon in the butter, add the leek, onion, apple and pear and cook for 2 minutes. Flambé with the rum. Place in a bowl and mix with the remaining ingredients, fill the turkey with it and sew up. Fry in a preheated oven at 150 degrees for 5 hours, brushing regularly with the curry butter. Turn the bird every 30 minutes.
