Instructions

  1. Line the hollows of a muffin tin with muffin liners.
  2. Melt the butter in a saucepan. Mix the flour and baking powder in a large bowl. In another bowl, stir the melted butter with the whisk of the mixer until frothy, sprinkling in sugar and vanilla sugar. Gradually mix in the eggs, milk and banana puree. The following applies: stir a lot and long so that everything stays nice and airy.
  3. Now pour the liquid mixture onto the flour and mix very briefly, 10 - 20 seconds are enough. Then fold the chocolate drops into the batter and pour everything into the muffin tins.
  4. Bake in the preheated oven at 180 ° C top / bottom heat for 20 minutes. The muffins then have to cool completely.
  5. For the frosting, mix all the ingredients together until the mixture is stiff. Be careful not to stir too long. As a rule of thumb, as soon as the bowl is moved and the mass no longer moves with it, but seems to stick to the bowl, the frosting is stiff and ready. Now apply the cream to the cooled muffins using a piping bag.
  6. For the decoration, a bar of dark chocolate is broken into 12 pieces of two pieces each. Melt the remaining 50 g chocolate in a hot water bath.
  7. If you like, you can also caramelize walnuts in honey. To do this, simply heat 1 - 2 tablespoons of honey in a pan, add 12 walnuts and stir over low heat until the nuts are caramelized. It takes about five minutes.
  8. Now drizzle the melted chocolate over the cupcakes, put a nut on each one if necessary and decorate with the chocolate chips.
