Cover the dough and put it in a cool place for 30 minutes. Roll out the dough about 1 cm thick on a lightly floured work surface, then cut out the almonds with a round cutter (3-4 cm diameter). Heat the fat in a high saucepan or in the deep fryer to approx. 180 ° C, bake the almonds in portions in the hot fat until golden brown. Lift out with a slotted spoon, allow to drain on kitchen paper and toss in the 200 g sugar while it is still hot (you can also mix in a little cinnamon).
