Clean and chop the red cabbage. Fry together with the diced apples and the chopped onion in hot oil until the red cabbage is a little softer (first on a large, later on a low flame). If necessary, cover the cabbage with water (possibly replace part with red wine). Add salt, cloves, cinnamon, a strong dash of vinegar and rock candy and reduce everything over a low flame until the water has almost evaporated and the cabbage is soft.
