Mix the sugar and cinnamon in a small bowl. Cut the puff pastry into 5 mm wide strips and place on a baking sheet lined with baking paper. Brush with butter and sprinkle with a little cinnamon and sugar.
Preheat the oven to 160 degrees. Twist the strips of dough individually into spirals. Sprinkle with the rest of the cinnamon and sugar and let rest in the refrigerator for at least 10 minutes.
Bake for 10 - 12 minutes until golden brown and allow to cool on a wire rack. The cinnamon sticks taste good with hot cocoa.
