First you separate the two eggs and break the egg white into egg whites. Then you mix the egg yolks with some flour, vanilla sugar, milk and 1/2 teaspoon baking powder. You can then fold in the egg white very carefully so that the dough is really fluffy.
Now you mix 2 tablespoons of butter, 1 tablespoon of cinnamon and 1 tablespoon of sugar in a separate container. If you now bake the pancakes in the pan, use the sugar-butter-cinnamon mixture to draw large snail patterns into the pancakes and then turn them. Thus, the sugar caramelizes and the cinnamon flavor is retained in the pancake.
Add a few banana slices and maple syrup or honey as a topping.
