Butter a pie or casserole dish. If using breadcrumbs, sprinkle them in the dish. Place the pitted cherries in the dish.
Beat the eggs and sugar together for 2 to 3 minutes until frothy and pale. Add the vanilla pulp (or vanilla extract) and salt. Stir in the yogurt until combined.
Add the milk and stir until smooth.
Add the flour and stir until you have a thin, smooth batter.
Pour the batter over the cherries.
Bake for 35 to 45 minutes until a wooden skewer inserted into the center comes out clean and the top is golden brown. The clafouti will rise during baking and may sink slightly as it cools, which is normal.
Cool to lukewarm or room temperature before serving. Serve with ice cream if desired.
