Instructions

  1. Cut the smoked tofu into small cubes and mash them with a fork. Fry the diced onion, garlic and chilli in olive oil and add the smoked tofu. Sear for 10 to 12 minutes. Add the tomatoes and bring to the boil. Add corn and beans and bring to the boil again. Season to taste and bring to the boil a third time.
  2. Serve hot with fresh wholemeal baguette.
