Club Lobster Sandwich Instructions

  1. Preheat broiler to high (230°C / 450°F). Line a baking sheet with foil.
  2. Using large kitchen scissors, cut vertically through the shell of each lobster tail. Using a knife, cut the meat vertically inside the shell. Spread the tail open to create two pieces of meat still partially in the shell. Gently lift and keep the meat in the shell.
  3. Place lobster tails on the baking sheet and brush with half the melted butter. Broil 10 cm from the heat for 3 minutes.
  4. Cool for 5 minutes. Remove the meat from the shell and chop it.
  5. In a bowl, combine chopped lobster with celery, mayonnaise, bacon, tarragon, white wine vinegar, and lemon juice. Cover and refrigerate for up to 2 days.
  6. Layer lettuce leaves, tomato slices, lobster mixture, and avocado slices between fried bread slices to make sandwiches.
