Instructions

  1. In a bowl, stir the butter with salt and powdered sugar for 2-3 minutes until foamy.
  2. Stir in the egg white until fully combined.
  3. Add the desiccated coconut and flour, stir until combined, then gather the dough with your hands.
  4. Wrap the dough in foil and refrigerate for 1-2 hours.
  5. Preheat your oven to 180°C (356°F) with top and bottom heat.
  6. Shape the dough into small balls and place them on baking sheets lined with baking paper.
  7. Using the handle of a wooden spoon, carefully press small indentations into the top of each ball without tearing them open.
  8. Fill each indentation with roughly 1 teaspoon of jam.
  9. Bake one tray at a time for 10-12 minutes until the biscuits turn golden brown.
  10. Cool the biscuits on wire racks until completely cool.
  11. Store in an airtight biscuit tin for at least 1 day—they will soften and become more tender with time.
