- In a bowl, stir the butter with salt and powdered sugar for 2-3 minutes until foamy.
- Stir in the egg white until fully combined.
- Add the desiccated coconut and flour, stir until combined, then gather the dough with your hands.
- Wrap the dough in foil and refrigerate for 1-2 hours.
- Preheat your oven to 180°C (356°F) with top and bottom heat.
- Shape the dough into small balls and place them on baking sheets lined with baking paper.
- Using the handle of a wooden spoon, carefully press small indentations into the top of each ball without tearing them open.
- Fill each indentation with roughly 1 teaspoon of jam.
- Bake one tray at a time for 10-12 minutes until the biscuits turn golden brown.
