Instructions

  1. Bring the lentils to the boil in the vegetable stock and cook until they have absorbed all the liquid.
  2. In the meantime, peel, dice and steam the onion, garlic and ginger. Add the curry powder and sauté briefly.
  3. Stir under the lentils and pour in coconut milk. Bring to the boil and simmer for about 5 minutes.
  4. Serve sprinkled with fresh coriander on rice or with naan.
