- Bring the lentils to the boil in the vegetable stock and cook until they have absorbed all the liquid.
- In the meantime, peel, dice and steam the onion, garlic and ginger. Add the curry powder and sauté briefly.
- Stir under the lentils and pour in coconut milk. Bring to the boil and simmer for about 5 minutes.
- Serve sprinkled with fresh coriander on rice or with naan.
