- Add the drained cod, then stir in the shrimps, onion, and parsley to combine.
- Sprinkle saffron to taste into the dough, stir well, and let rest for 10-15 min.
- Heat vegetable oil in a large frying pan to 175°C (350°F) over medium-high heat, with the oil about 1-1.5 cm deep.
- Spoon portions of dough (about 2-3 tablespoons per fritter) into the hot oil and flatten slightly so the fritters are almost completely covered.
- Fry for 3-4 minutes until the bottom is golden brown.
- Flip the fritters carefully and fry the other side for 2-3 minutes until golden brown.
- Transfer the cooked fritters to paper towels to drain excess oil.
