- Wash the leek and cut into thin rings.
- Wash the tomatoes and cut each into 1/8 pieces.
- Peel the onions and chop them.
- Heat clarified butter in a large pan over medium-high heat.
- Add the chopped onions and sauté for 2 min.
- Add the tomatoes and leek rings and sauté for 3 min.
- Pour in the white wine, stirring to deglaze the pan.
- Simmer for 5 min until the vegetables soften.
- Season to taste with herbs, salt, and pepper.
- Coat the cod fillets with flour and salt on both sides.
- Fry the cod fillets in clarified butter over medium-high heat for 3-4 min per side until golden brown and opaque.
- Place the vegetable mixture on a preheated plate and arrange 2 cod fillets on top.
