Instructions

  1. Wash the leek and cut into thin rings.
  2. Wash the tomatoes and cut each into 1/8 pieces.
  3. Peel the onions and chop them.
  4. Heat clarified butter in a large pan over medium-high heat.
  5. Add the chopped onions and sauté for 2 min.
  6. Add the tomatoes and leek rings and sauté for 3 min.
  7. Pour in the white wine, stirring to deglaze the pan.
  8. Simmer for 5 min until the vegetables soften.
  9. Season to taste with herbs, salt, and pepper.
  10. Coat the cod fillets with flour and salt on both sides.
  11. Fry the cod fillets in clarified butter over medium-high heat for 3-4 min per side until golden brown and opaque.
  12. Place the vegetable mixture on a preheated plate and arrange 2 cod fillets on top.
