Instructions

  1. Peel and roughly chop shallots. Roughly chop the garlic cloves as well. Dice the pork belly and leave in a large saucepan until crispy. If necessary, add a little more fat and sweat the shallots and garlic in it. Add the minced meat and fry until it is dry (no more water in the pot). Season with salt, pepper and some chili powder.
  2. Deglaze with the dark beer and gradually add all the ingredients, first the spices and tomato paste, then the tomatoes, beans (each with juice), the chili peppers cut into fine rings, and finally the chocolate and espresso.
  3. Let cook for at least an hour until the desired consistency is achieved. best to prepare the day before and heat it up. Caution: Chilli powder is equally hot, fresh pods only the next day!
  4. Season to taste with salt, pepper, sugar, cumin and chili powder.
