Peel and mince the garlic. Peel and slice the ginger. Peel and slice the onions. Crumble the dried chili peppers.
Heat the sesame oil in a saucepan over medium-high heat. Add the garlic, onions, ginger, and chili peppers and fry for 2-3 minutes. Add the chicken pieces and fry for 5-8 minutes until browned on all sides. Pour in the soy sauce, cola, and water. Bring to a simmer, then reduce heat to medium-low and cook for 15-20 minutes until the chicken reaches an internal temperature of 74°C (165°F) and the sauce has reduced.
