Grind the cookies in a blender and then mix with melted butter until a homogeneous thick mass.
Cover the bottom of the cheesecake pan with baking paper (so that it can be easily removed later). We tamp the cookies, evenly distributing them along the bottom.
Whip the cream with 5 tablespoon. sugar to soft peaks. Add mascarpone, stir well.
Pour gelatin for 5 minutes with cold water, and then dissolve in a water bath.
Gently mix the cream cheese mass with the gelatin until smooth. Pour the cake evenly with the resulting mass. We put it in the refrigerator for another 3 hours.
Cut canned peaches into slices.
Garnish your cheesecake and serve when it has been set properly.
