Colored Scrambled Eggs with Bell Pepper Instructions

  1. We prepare products according to the list.

  2. Rub the cabbage on a fine grater and squeeze the juice through a sieve or cheesecloth.
  3. We separate the yolks from the whites, trying to preserve their integrity.
  4. Pour in the cabbage juice to the proteins and shake vigorously. (The more juice you add, the more intense the color of the eggs. I added 1 tablespoon of cabbage juice. If you want brighter eggs, feel free to add more cabbage juice – it is almost tasteless and will not affect the taste and aroma of the dish itself.)
  5. The cabbage juice will turn the transparent egg whites turquoise.
  6. Preheat the pan, grease with butter. Pour about half of the protein mixture into the pan. We fry for a minute, until the proteins grab.
  7. Cut the sweet bell peppers into strips and spread them along the edges of the protein pancake. If you use red and yellow peppers at the same time, then the scrambled eggs will become even more colorful.

  8. Add a couple of drops of lemon juice (optional) to the second half of the colored proteins – the color will instantly change to purple. I think such a visual experiment will be useful and interesting for children.
  9. Spread the purple proteins over the toasted pancake. Gently lay the egg yolks on top. Salt, pepper and, under the lid, bring the yolk to the desired readiness.
  10. Funny colored fried eggs with bell pepper are ready. Decorate the eggs with parsley leaves and serve.
