Quarter the outer leaves of the cabbage and cut out the stalk. Wash and peel the carrots. Halve the peppers, remove the seeds and white skin, wash the peppers. Peel and cut the onion into eighths. Slice the vegetables with the fine vegetable grater of the food processor.
Then place in a large bowl and knead vigorously with salt, vinegar, oil, pepper, sugar and - to taste - pressed garlic so that the herb becomes soft. Mix in the parsley and season with vinegar, oil, sugar and pepper.
