Wash the lamb`s lettuce thoroughly. Peel the onion and wash the tomatoes. Finely dice both and pour over the salad. Peel the carrots and cut into fine slices, dice the feta too. Also pour over the salad. Clean the mushrooms, fry them in a pan with a little olive oil and pour them over the ingredients while still warm.
Mix a sauce of balsamic vinegar, olive oil, salt, pepper, a little mustard and honey and season with a little lemon or orange juice.
Arrange the salad on plates, cover with the dressing and serve.
