Instructions

  1. Preheat the oven to 180 degrees circulating air or 200 degrees top and bottom heat. Possibly put paper cases in the muffin tray or grease the tray.
  2. Sift the flour and mix well with baking powder, baking soda, salt and spices. The seasoning can be stronger here (comparable to the seasoning of minced meat), the muffins can take it - and taste really delicious afterwards. Clean the peppers and zucchini and dice them finely. Add to the flour together with the well-drained corn, the ham (or kabanossi) and about half of the cheese and mix well.
  3. Whisk the eggs with the oil and buttermilk and add the moist ingredients to the flour mixture, and only fold in until all the dry ingredients are moist. In general, the following applies to muffin dough: After adding the flour, stir very little, otherwise the dough will not rise so nicely and will quickly become soggy.
  4. Pour the finished dough - which can be quite thick - into the molds in portions and sprinkle with the rest of the cheese. Bake at 180 or 200 degrees for about 20-24 minutes.
  5. These muffins taste just as delicious warm as they are cold. If they are still warm, however, they cannot be easily separated from paper cases. I`ve been using silicone molds for years and this problem doesn`t exist.
