Instructions

  1. Peel the potatoes and carrots and cut into slices approx. 2 mm thick. If necessary, halve or quarter the potatoes beforehand. Wash the broccoli and cut into small florets.
  2. Cook the potatoes and carrots together in salted water for about 10 minutes, then add the broccoli florets and cook for another 5 minutes until everything is firm to the bite. Drain through a sieve.
  3. In the meantime, peel the onion and cut into small cubes. Sweat in the butter together with the ham until translucent. Stir in the flour and deglaze with the stock and milk, simmer for about 10 minutes. Stir in the crème fraîche and season with the spices. Mix everything together carefully.
