Peel and finely dice the onion and garlic cloves. Heat oil and butter in a pan and sauté the onion and garlic until translucent. Finely dice the carrot and add to the pan with the peas and corn. Sprinkle the vegetables with the parsley and sauté everything briefly.
Stir the rice into the vegetables and pour hot water over them. Close the pan with a lid and let everything simmer over medium heat until soft. Optionally, cut the cooked chicken into small pieces and place it on the Risi Bisi around 5 minutes before the end of the cooking time and heat it gently.
Regularly check the cooking condition of the rice and the water level. If necessary, add water or, optionally, some chicken soup.
As soon as the rice is soft, spread the cheese over the Risi Bisi and stir gently.
