Peel and dice the potatoes and vegetables. Sweat the onion in a large saucepan with oil. Add the potatoes and carrots and pour the water over them. Add the roughly chopped lovage and marjoram, season well with salt and pepper and simmer for 30 minutes.
Drain the water and collect it in a saucepan. Mash or puree the potatoes well and add the liquid again.
If you like, you can sear the hunting sausage with an onion and add it to the soup or serve Wiener sausages with it. The soup also tastes delicious vegetarian and can be frozen well in portions.
