Cut the zucchini and peppers into small sticks. Peel the carrots and cut them into small sticks. Cut the celery, onion, peppers and garlic into small cubes. Mix everything in a bowl. Finally, chop the fresh herbs (possibly chives and parsley - depending on your taste) and add to the vegetables.
For the dressing, mix vinegar, olive oil, mustard, savory, salt, pepper, paprika and the granulated stock to a smooth dressing. Depending on your preference and taste, you can add a dash of white wine or water. Pour the dressing over the salad and mix well. Let the lettuce soak in the refrigerator for about 1 to 2 hours.
This zucchini salad goes well with grilled meat or fish. Herb or garlic baguettes round off this meal perfectly.
