Caramelize the 200g sugar in a large saucepan, add the milk and bring to the boil. Add all other ingredients up to and including sugar and reduce to about 1/3 of the amount for about 2 hours. Stir constantly until the liquid thickens and flows off the spoon like honey. Season with cognac and pour into jam jars. (gives approx. 3 medium glasses)
Wonderful as a spread or as a flavor for homemade ice cream with caramel sauce.
Tip: Put a few marbles (glass) in the boiling milk, they will do the stirring.
