Instructions

  1. Clean the mushrooms with a brush. Grind to the size of a lentil I do this in my food processor with a cutting knife. Chop the rolls in the food processor and add them.
  2. Roughly chop the walnuts. Roast in a pan without fat until a fine roasted aroma is noticeable. Let cool down briefly and add to the mushroom mixture.
  3. Peel and finely chop the onions and garlic. Add to the mass.
  4. Then mix in all the spices and the soy flour. Knead everything well with your hands. The mass should not be too moist and should not fall apart. Otherwise, work in enough breadcrumbs until the patty is compact and easy to shape with your hands. Season to taste with salt. Shape patties.
  5. Heat the oil in a pan and fry the roasting line until crispy brown. They taste best when they have a darker degree of browning, but please do not let them turn black.
  6. Use as burger patties or as a roast.
  7. Tip: You can also use chickpea flour instead of soy flour.
