Remove leaves and threads from the corn on the cob, wash well and scrape the kernels off the cob (also canned corn as a substitute). Roughly chop these and place in a bowl.
Separate the eggs, add the yolks to the corn, beat the egg whites until stiff. Season the corn with salt, pepper, sugar and nutmeg. Add the flour and mix everything well, fold in the egg whites.
Put clarified butter in a pan, spoon the batter into the pan with a tablespoon and fry until golden on both sides.
For aesthetic and taste reasons, I like to add diced red or green peppers.
