Instructions

  1. Preheat the oven to 180 ° C top / bottom heat. Grease a baking pan with a diameter of approx. 22 cm. Melt the coconut oil and let it cool. Mix the almond milk with the lemon juice and let stand briefly. Mix all dry ingredients, add the liquid ingredients and mix everything into a smooth dough.
  2. Pour the dough into the prepared baking pan and bake in the preheated oven on the middle rack for approx. 30 - 35 minutes until golden yellow.
  3. The cornbread tastes delicious even when it is lukewarm.
  4. Freshly baked, the cornbread tastes delicious for breakfast or in between. It is delicious cut into cubes and coated with a little butter and jam. For a slightly sweeter version of the corn bread, use a tablespoon more honey and fold in a few blueberries before baking.
