Caramelize the walnuts with 1 teaspoon honey, brown sugar and 2 tablespoons water. Let cool on baking paper.
Beat the cream with 1 packet of vanilla sugar until stiff, stir in the quark with the sugar and stir in 2 teaspoons of instant gelatine and 1 teaspoon of vanilla paste.
Peel the mangoes and cut into cubes, set aside the cubes of 1/2 mango for decoration. Puree the remaining mango cubes with the juice of the lime and 1 teaspoon vanilla paste. I do it in the smoothie maker, it`s quick and without splashes.
Pour half of the quark cream into a glass bowl, then the mango puree and finally the rest of the quark cream. Pour the walnuts and the mango cubes set aside over the cream as a decoration.
