Instructions

  1. Pour 2 cups coconut milk into a saucepan and warm over medium heat until steaming (do not boil).
  2. Stir in 1 cup couscous, 2 tbsp chia seeds, and 2 tbsp coconut blossom sugar. Stir a few times to distribute, then cover and remove from the heat. Let soak for 10 min, giving a gentle stir halfway through, until the couscous is tender and the mixture has thickened.
  3. Fluff with a fork and divide between bowls. Top with fresh fruit compote and serve warm.
