Prepare the couscous according to the package instructions (for me: take the same amount of water and couscous. Bring the water to the boil, remove the saucepan from the stove, stir in the couscous, let it steep for 2 - 3 minutes). I like to add 1 tablespoon of olive oil and a little salt to the water. Then stir in the tomato paste.
In the meantime, peel and finely dice the red onions and garlic. Sweat the onions, add the garlic after about 5 minutes and cook. Let both cool down (10 minutes will do).
Finely dice the cucumber, pointed pepper, tomato and avocado and place in a bowl. Add the couscous and onions, stir. Season to taste with salt, pepper, olive oil and paprika powder. If you like it spicier, you can also add dried chilies.
